Things are popping for these new downtown players

When you’re this happy, it’s hard not to smile.

Kristen Davey and her husband Bill Hallman are all smiles these days (and just a little bit winded because of all the hard work) because the opening day for The Happy Popcorn Co. is just around the corner.

Actually, it’s around the corner and down the street a bit, but the plan is to open downtown Cornwall’s newest eatery by Nov. 23.

The Happy Popcorn Co. will feature everything from the sweet and savoury, to the artisan and the traditional at its location at 5 First Street East.

The freshly popped gourmet popcorn is flavoured with a variety of salty and candied options. There will also be candy and funky flavoured sweets from Candy Labs and Peace by Chocolate. Retro and imported sweets are on the menu as well.

“Downtown Cornwall is coming alive,” said Kristen. “The longer we have been here the more we see happening and we want to be part of that. We want to be part of the family.”

Family is a big part of the raison d’etre for The Happy Popcorn Co. The operation was conceived, in large part, because of the couple’s son Jack – who LOVES popcorn.

“Jack is on the Autism spectrum, and as parents, we wanted to plan for his future,” said Bill. “We’re grateful to be able to open a business inspired by Jack’s love for popcorn, and we set out to create a place of inclusion – not only for Jack but for others too.”

“As we grow, we aspire to make this candy-coated, kernel popping, slushie slurping shop a cornucopia of employment opportunities for everyone.”
